 Easy Salmon Dinner

Gammy says You will like this Easy Salmon Dinner.  It’s just a new sorta spiced up twist on our regular old Lemon Salmon.

Ingredients

These amounts are for two servings

  • 2 tablespoons Olive oil
  • 2 Salmon Filets 
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 Tbsp. butter
  • 1 Lime – sliced thin
  • 1 pinch dill weed
  • 2 cloves garlic
  • 3/4 cup white wine
  • 1 pinch dried parsley flakes or  fresh chopped– for garnish

 

Here is your Easy Salmon Dinner “How to”

Put a skillet on the stove at medium high.Put in just enough olive oil to coat the bottom. Then very lightly salt and pepper your filets. Lay them in the skillet. Give them about 2-4 minutes a side depending on their thickness. When they are firm and want to flake when poked with your finger, carefully take them out and set them aside in a dish that will catch the drippings.

Add a little more olive oil and the butter to the pan. When the butter has melted add the garlic and the dill weed. Give the garlic about a minute then add the lime slices (you can use lemons if you want) and the white wine.

 

Put the salmon and the drippings back in the pan and get the filets coated with the sauce. When the liquid has reduced and thickened up a little serve up your Easy Salmon Dinner and lime sauté’ with a few of the lime slices and some dried or chopped fresh parsley as a garnish. You might like some chilled Pinot Grigio with it or maybe a Chablis. This goes good with our oven baked zucchini with onions and parmesan cheese.
