This dish is one of the many that we go to to stay on our Mediterranean Diet.   Which by the way is working out great for us. We are keeping the weight off and feeling real good. The butter in this recipe is a little bit of a cheat but once in a while is okay. Just don’t tell the Mediterranean gods on us. 

Growing up back in New Jersey there was always fish stores handy that had fresh flounder and Sole available. Where we live here in Texas we get them frozen at the local grocery store. If you have to thaw yours out, like we do,  just put them in a bowl of water. They will be ready to go in about 5 minutes. You can get the carbs and the veggies together while the Fillets thaw out.

Let’s get our Fillets ready

 

Put a large skillet on the stove at medium high. Put in the butter and squeeze in the lemon juice. Pat the fillets dry with paper towels. When the butter has calmed down lay the fillets out in the skillet with the gray side up.

Poppop cooks

Just about 1 1/2 to 2 minutes a side depending on the thickness. Garnish with a little of the liquid from the skillet and some dried parsley and enjoy your Lemon Butter Fillets of Sole. Here is another easy and very good flounder recipe

I put together some tortellini with olive oil and grated parmesan.  And, a salad of avocado and tomato slices with some chunks of fresh mozzarella.

 

Now wasn’t that easy? 

This also works real well with just about any other fish fillets. Just adjust the cooking times to suit the thickness of your fillets.

Ingredients

  • 4 fillets sole totaling about 3/4- 1 lb
  • 2 tbsp butter or olive oil
  • 1/2 lemon
  • 2 pinches dried parsley for garnish
