Italian Sausage, Peppers and Onions Dinner

5 minutes prep – 20minutes cooking – total 25 minutes


 

Italian Sausage and Peppers Dinner the whole supper in one pan. It will take no more than 20 – 25 minutes. We like it so much that we find ourselves wiping up our plates with Poppop’s easy homemade bread.

 

We’ve published some sausage and peppers recipes before, but, we’re always trying new ways to make this old favorite. So far this one leads the pack.

Ingredients

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch all of the amounts to metric.

  • Olive oil
  • 4-5 Italian sausage – hot or mild
  • 2 medium size potatoes -or 1 large
  • 1 large fresh bell pepper – red or green
  • 1 medium fresh onion cut into strips
  • 1 tablespoon ground black pepper
  • 2 tablespoons dried basil leaves or 4 tablespoons  chopped fresh 
  • 8-10 cloves fresh garlic sliced or chopped

Here’s how to quickly and easily put together your Italian Sausage, Peppers and Onions Dinner

 

Put a large skillet on at medium heat and swirl just enough olive oil to barely cover the bottom. The sausage is going to add some oil of its own. Lay the sausage out in the skillet and with a small pointed knife poke 3 or 4 holes in the sausages. Then turn them over and poke the other side.

While the sausage is cooking cut up the veggies. Clean and remove the eyes from the potatoes and cut them in half lengthwise then into slices about 3/8″ thick. Clean the pepper(s) and cut them in half lengthwise. Pull the seeds and the stem out. Then cut them lengthwise into strips about 3/4″ wide then cut the strips into three pieces each. Cut the onions into strips about 1/2″ wide. Slice or chop up the garlic.

It should be time to turn the sausages over now. Do it, then spread the potato slices around the sausages. Turn the potatoes over a few times as they cook.

When the potatoes are starting to get little brown around the edges push the sausages out to the sides of the pan with the potatoes and add the peppers and onions to the middle. Add some ground black pepper and some basil. Turn the peppers and onions over a couple of times as they cook.

When the Peppers and onions are just starting to show signs of getting cooked around the edges mix it all together and turn or flip it all a few times as everything cooks together. The sausages will be done when there is oil leaking out of the holes that you poked. When it’s all just about ready spread it all out to the sides of the pan and spread the garlic out in the resulting bare spot.

When the garlic just begins to get translucent stir or flip everything together and serve it up. Don’t forget to top it with some freshly grated parmesan, of course.
