Zucchini Parmesan
This Zucchini Parmesan recipe is real tasty and real easy. You could substitute eggplant or chicken for the more traditional ways that it is usually done but sometimes we just stray off the beaten path for variations of the traditional – well, fairly often actually.
You won’t have to go through the steps to get the moisture out of the zucchini like you do with eggplant. Or defrost and hammer them like the chicken breasts. And the zucchini slices cook a lot faster than chicken or eggplant.
Ingredients
These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of the ingredients to what is needed for the number of servings that you have chosen. Also you can switch the amounts to metric.
- 2 small fresh zucchini or 1 large one
- 1 1/2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 ttablespoon dried basil leases or 2 tablespoons chopped fresh basil leaves
Here’s how to make your Zucchini Parmesan
First put a skillet on at medium high and add just a little bit of olive oil. Just enough to barely coat the pan. Light up the broiler so it will be heating up while you do your magic on the stovetop. Rinse off the zucchini, cut off the ends and slice them lengthwise into slices about 1/4″ thick.
Lay the slices in the skillet. When you fry them in the skillet you don’t want to cook them all the way through and wind up mushy. Just sear them on the outside.
Turn the heat off and top them with some marinara sauce
Then some Mozzarella, basil, grated parmesan and drizzle a little olive oil.
Then put the skillet under the broiler until the mozzarella has melted to the way that YOU like it. Enjoy your Zucchini Parmesan with your favorite kind of pasta.

Ingredients

- 1 tablespoons dried basil leaves or twice as much chopped fresh basil leaves

Light up the broiler so it will be heating up while you do your magic on the stovetop. Rinse off the zucchini, cut off ends and slice them lengthwise into slices about 1/4" thick.
- Lay the slices in the skillet. When you fry them in the skillet you don't want to cook them all the way through. Just quickly sear them on the outside.
- Top them with some marinara sauce. Then some Mozzarella, basil, grated parmesan and drizzle a little olive oil.
- Put the skillet under the broiler until the mozzarella has melted to how YOU like it. Then serve and enjoy your Zucchini Parmesan. It's easy and delish!
