Zucchini Rollatini with Basil

Most of the zucchini rollatini that you see has been baked with the rolls laying on their sides and crowded together. But when it’s just the two of us I put them in a small pan with the zucchini rolls on their sides with some space in between them so they will bake more evenly and quicker. 

Zucchini Rollatini Ingredients

for 2 servings

  • Olive oil
  • 2 Italian sausages – spicy or mild
  • 2 cloves garlic – chopped
  • 1 cup marinara sauce
  • 1/4 cup grated parmesan cheese
  • 3/4 cup chopped fresh basil leaves or 1 rounded tablespoon dried
  • 1 large fresh zucchini
  • 4 small thin slices of mozzarella cheese or 2 Tablespoons shredded

Set your oven at 400°F.

Put a skillet on the stove at medium high. And add enough olive oil to barely cover the bottom.

Remove the skin from the sausages and put the sausages in the skillet.  Break up the sausages with a spoon or a flipper. Add the chopped garlic

Turn or flip them a few times as they cook. And when they are done add the marinara sauce, basil and most of the parmesan cheese.  And hold just a little of the parmesan back for serving.

As the sausage is cooking cut the ends off of the zucchini and slice off about a half of an inch lengthwise.

Now slice off 4 slices about 1/4 of an inch thick each.

Line a baking pan with aluminum foil and lightly spray with olive oil. Use toothpicks to form the zucchini  rolls and stand them on their sides in the baking sheet.

Put the sausage into the zucchini rolls. Top them with a slice of the mozzarella, and  just a drizzle of  marinara sauce. And a little of the parmesan that you held back. Into the oven for about 10 – 15 minutes. I test the zucchini with a table fork to see when it’s done. When it is soft and easy to poke it’s ready.
