Quick Easy Chicken Dinner – Mediterainian Diet

Quick Easy Chicken Dinner

You could cook up this Quick Easy Chicken Dinner all in one skillet by adding some diced potatoes (that you softened in the microwave) or gnocchi to the skillet. But tonight we wanted some Fetttuccini Alfredo. Gammy has to stay gluten free so I made some faux fettuccini for her by spiralizing  some zucchini on our new spiralizer. She liked it!

What you will need

  • olive oil
  • 2 tbsp. butter divided
  • 1 large boneless skinless chicken breast cut in half horizontally or 2 small ones
  • salt and pepper to taste
  • 1 roma tomato sliced
  • 1 lemon sliced
  • 2 cups broccoli florets
  • 4 cloves garlic – chopped
  • 1 splash white wine – optional
  • 1/4 cup grated parmesan cheese

And here is how to throw together your Quick Easy Chicken Dinner

 

Put a skillet on at medium high and eyeball just enough olive oil to cover the bottom. Add half of  the butter. Salt and pepper the chicken filets and lay them in the skillet. About 3-4 minutes a side depending on their thickness. 

While the chicken is cooking cut up the vegetables. Slice the lemons and the tomatoes. Chop up the garlic.  Cut the broccoli florets in half top to bottom thru the stem.

Add the veggies to the skillet and get the chicken laying on all of the veggies. Generously sprinkle with grated parmesan cheese.

Add the rest of the butter and a splash of white wine.  Optional on the wine. Let it all cook together stirring it all couple of times as the veggies cook. 

Then serve up and enjoy your quick easy chicken dinner.

Tips for this recipe.

  • If you opt for potatoes instead of the fettuccini alfredo dice them up into small chunks and soften them in the microwave before adding them to the skillet.
  • Or you could just go with gnocchi. You could just put the gnocchi  in the skillet when you add the veggies. 
  • The thinner that your chicken filets are the faster you will get your quick easy chicken dinner on the table. To get them thinner put them in a big ziplock bag and hammer them with a pot or skillet. Or a meat tenderizer hammer.  We got this one  from amazon years ago and it works great.
