Potatoes and Carrots in the Microwave
If your protein has to be done on the stovetop and it’s not going to take long. Like tonight’s Italian Lemon Chicken. Then doing the Potatoes and Carrots in the Microwave Oven while you do the Lemon Chicken – or whatever – definitely makes sense. The Potatoes and Carrots done like this with butter melted on them and parsley flakes are good. Real good. Whenever we have them with company we get asked for the recipe.
Today’s Tip
If your cutting board wants to scoot around on the countertop while you are doing your cutting and chopping just put a damp dish towel underneath it.
Here is your Potatoes and Carrots in the Microwave How to
First peel and cut up the potatoes and carrots into about three-quarter inch pieces.
Put them in an oversized microwave safe bowl that will give you room to toss them with the butter and parsley.
Into the microwave for about six to eight minutes until they are easy to poke with a fork. Add the pads of butter and the parsley and stir it all up. Getting the butter and parsley spread all over.
Then serve it up and enjoy it.
Like we did tonight with some Italian Lemon Chicken that I multi tasked and got together.

Ingredients
- 2 large carrots
- 2 medium size potatoes
- 4 pads butter
- 2 tbsp dried parsley flakes or four tbsp. fresh chopped
