I was stuck trying to come up with A One Pot Weeknight Dinner.  It had been a kinda busy day for both Gammy and myself. So as I so often do, I pulled the freezer drawer open and poked around. The quickest and easiest were looking like chicken tenders. Then what about the carbs and the veggies?

It started to look like it was going to be chicken tenders and broccoli from the freezer. And potatoes, onion, garlic and spinach from the fridge. I thawed out the chicken tenders and softened up the potatoes in the microwave. 

Put a large skillet on at medium High and added some olive oil. Cut up the chicken tenders and the veggies then added it all, except the spinach, to the skillet.

Salted and peppered it. Stirred or tossed it all together. When the chicken was done (about 6 – 8 minutes) I added the spinach and stirred it in with the rest of the One Pot Weeknight Dinner.

The spinach wilted right away then I served up our One Pot Weeknight Dinner with some of our no knead bread (that we keep sliced up in the freezer).

Ingredients

  • olive oil
  • 4 chicken tenders cut into 1 inch cubes
  • 1 large potato cut into 1 inch cubes
  • 3 cups brocccoli florets
  • 1/2 onion - medium size cut into strips
  • 4 cloves garlic chopped
  • 1 handful fresh spinach
  • salt and papper to taste

Instructions

  • Put a large skillet on at medium high and add some olive oil. Cut up the chicken tenders and the veggies then add it all, except the spinach, to the skillet.
     
  • Salted and pepper it. Stir or tossit all together. When the chicken is done (about 8 - 10 minutes) Add the spinach and stir it in with the rest of the One Pot Weeknight Dinner.
