Lemon Garlic Salmon – Quick and Easy

We have Salmon about once a week. And, more often than not it’s a quick and easy version done in a skillet. Like this Lemon Garlic Salmon recipe. Of course you can tweak it a lot of different ways. This is our go to version for when we’ve been busy and we are STARVING.


The broccoli and the gnocchi  are also really quick and easy. And, they go along with the fast cooking Lemon Garlic Salmon.

So, look over my shoulder while I put together this Lemon Garlic Salmon weeknight dinner.

 

First let’s put the salmon filets in a bowl and drizzle a little olive oil and white wine in. Optional on the wine of course. Chop up the garlic. Add the lemon slices, half of the garlic, black pepper, dill weed, or whatever other spices that you prefer. Let it all rest together while you get the skillet ready.

Put a skillet on at medium high and drizzle in just enough olive oil to cover the bottom and add a little butter.

Put in the salmon filets with the skin side up. And, also the lemon slices and everything else  from the bowl. Cook for about 2 – 3 minutes after the liquids start to simmer. The time depends on the thickness of your fillets and how done that you like your salmon cooked.

Turn the salmon fillets over and let the skin side cook just about a minute.

After you get the salmon skillet up and running put another skillet on for the gnocchi and broccoli. Drizzle just enough olive oil to cover the bottom and add the broccoli, gnocchi, salt, pepper and the chopped garlic.

Toss the broccoli and gnocchi a few times as they cook. 

When the gnocchi and broccoli are cooked as much as you like them. And, the salmon is done to your standards serve it up!

We had a nice Chardonnay and some of our homemade bread with our Lemon Garlic Salmon. Enjoy!!

Ingredients

  • 2-3 fillets salmon
  • olive oil
  • 1 tbsp butter
  • 1 lemon thinly sliced
  • 1 tsp dried dill weed
  • 1/2 cup white wine optional
  • 2 tbsp chopped garlic 1 tbsp. for salmon - 1 tbsp. for broccoli and gnocchi
  • 2 cups broccoli florets
  • 2 cups gnocchi
  • salt and pepper
