Italian Beef Peppers and Onions – One Skillet – Twenty Minutes – Gluten Free – Paleo

This Italian Chopped Beef Peppers and Onions came to our rescue one night. We wanted to have Sausage, Peppers and Onions but when I went to the fridge to get the ingredients out there were no sausages. This was serious. But, I found some chopped beef and thought,  what the heck.

And, with a little jazzing up with some sausage like spices it turned out real good. Did the whole meal in one skillet and it took just twenty minutes.

Put a skillet that is big enough to handle all of your ingredients on at medium high and add your olive oil. Cut up your veggies have the chopped beef ready to go. These are the veggies. Potato cut into small cubes, onion cut into strips, fresh pepper (any color that you want) cut into about 1 inch squares  and garlic cloves chopped.

Put everything into the skillet and break up the chopped beef and the onions. Add some red pepper flakes, basil and parsley (dried or chopped fresh), salt and pepper.

When the beef has tuned brown and the peppers and onions have wilted shake a generous amount of grated parmesan cheese on top.

Mix it up and serve it up. With some more grated parmesan on top. And, some of poppop’s easy homemade bread.

Ingredients

  • olive oil
  • 1 pound Ground beef 2 cups
  • 1 bell pepper - cut into 1" square pieces any color
  • 1 medium size onion - cut into strips about 1 and 1/2 cups
  • 1 small potato - cut into small cubes about 1 and 1/2 cups
  • 4 cloves fresh garlic - chopped about 2 rounded tablespoons
  • 1 tbsp dried basil or 2 tbsp. chopped fresh
  • 1 tbsp dried parsley or 2 tbsp chopped fresh
  • 1 pinch red pepper flakes optional
  • salt and pepper to taste we did 1/2 tsp each
  • 2 tbsp grated parmesan cheese devided 1/2 the skillet and 1/2 serving
