Honey Mustard Salmon – Oven Baked – Gluten Free

Honey Mustard Salmon

 


To make your Honey Mustard Salmon you could use some of the “honey mustard” that you can buy off the shelf in the grocery store.  Or, you could just mix some up like I did tonight. We always have mustard in the fridge and honey in the pantry. Start to finish it took twenty five minutes. But, fifteen of those minutes were in the oven. I put together some “tossed” caprese salad while the salmon and potatoes were doing their thing in the oven.

Ingredients

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch the amounts to metric.

  • 1 1/2 tbsp. mustard
  • 1 1/2 tbsp. honey
  • 1 lemon
  • olive oil
  • 2 small russet potatoes 
  • 1 tsp. garlic powder
  • 3/4 tsp. salt
  • 3/4 tsp. black pepper
  • 1 tsp. dried basil leaves
  • 1/2 cup grated parmesan cheese – or more!

 

 

Let’s get this Honey Mustard Salmon going

 

Get the oven going and set at 400°. Line a baking sheet with aluminum foil and spray or wipe it with olive oil. In a bowl put the mustard, honey and lemon juice. Then, whisk it all together.

We’re going to cook some cheesed up potato slices on the same baking sheet with the salmon. So I peeled and sliced up the potatoes into about 3/8″ slices. Spread them them out on the their side of the baking sheet. And, drizzled them with olive oil. Sprinkled some salt, garlic powder, pepper, dried basil leaves and generously with grated parmesan cheese. Then lay out the salmon with their flat (aka skin sides) down on the pan and covered them with the honey mustard mixture.

Into the oven. Check on them at about ten minutes but it usually takes closer to fifteen minutes depending the thickness of the filets. When the potato slices are real easy to poke with a fork and the salmon wants to flake when you pull on it with a fork they are ready. You could give it another 1 or 2 minutes or so under the broiler to get everything a little more crusty if you want to. But that’s up to you.
