Easy Grilled Shrimp and Veggies
Your Easy Grilled Shrimp and Veggies can be done in a big skillet (or two) or outside on the grill or inside on a non stick stove top grill like we did here. This will work for you on a busy weeknight. It’s real good and real healthy.
For the veggies start out with onions, pepper and garlic. Then whatever strikes your fancy that you might have on hand. We had some zucchini, broccoli and eggplant so those got thrown into the mix.
If you have to thaw out the shrimp just put them into a bowl of water. They will be ready to get put on the grill when you are ready for them. Pat them dry on some paper towels before putting them on the grill. Put the grill or skillet(s) on at medium high. Spray or wipe with olive oil.
Cut up the veggies like you see them here in this pic.
Spread out all of the veggies except the garlic and eggplant on the grill.
When they are just starting to show browned spots from the grill or skillet get out your big pancake flipper and flip them over. Then add the eggplant and garlic.
Lightly sprinkle with salt and pepper. And, some red pepper flakes if you’re feeling a little spicy.
The eggplant pieces will show grill marks pretty quick and when they do shove everything out to the sides of the grill and put the shrimp on the bare spot in the middle. Squeeze the juice from half of a lemon all over everything.
Cook the shrimp about a minute to a minute and a half a side until they are pink on the outside and opaque in the middle.

Quick and Easy Grilled Shrimp and Mediterranean Veggies
Ingredients
- 12 large large or jumbo shrimp peeled and deveined
- salt and pepper
- 1 large pinch red pepper flakes optional
- 1/2 large zucchini sliced 3/8" thick
- 1/2 medium onion cut into wide strips
- 1 red bell pepper cut into about 1" squares
- 1 green bell pepper cut into about 1" squares
- 2 cups broccoli florets or sprouts cut in half
- 4-6 cloves garlic coarsely chopped
- 1/2 small eggplant cut into french fry shapes
- 1 fresh lemon 1/2 for grilling 1/2 for serving
