If you have to thaw out the shrimp just put them into a bowl of water and they will be ready to get put on the grill when you are ready for them. Pat them dry on some paper towels before putting them on the grill.
Put the grill or skillet(s) on at medium high. Spray or wipe with olive oil.

When they are just starting to show browned spots from the grill or skillet get out your big pancake flipper and, well, flip them over. Then add the eggplant and garlic.
Lightly sprinkle with salt and pepper. And, some red pepper flakes if you're feeling a little spicy.
The eggplant pieces will show grill marks pretty quick and when they do shove everything out to the sides of the grill and put the shrimp on the bare spot in the middle. Squeeze the juice from half of a lemon all over everything.
Cook the shrimp about a minute to a minute and a half a side until they are pink on the outside and opaque in the middle.
Then serve up and enjoy your easy grilled shrimp with Mediterranean diet veggies.
