Easy Catfish Dinner
This Easy Catfish Dinner fits right in with us trying to stay a s close as possible to the Mediterranean diet. It’s easy with just a few ingredients and it all comes together real quick. And then the most important part – IT IS GOOD!

Here’s what you will need
- Olive oil
- 2 small catfish filets – about 6 ounces each- or 1 big one halved
- 2 Tbsp. grated parmesan cheese
- 2 fresh small limes – or lemons – 1 for cooking 1 for serving
- a pinch of red pepper flakes – or cayenne pepper
- a splash of white wine – or chicken broth
And here is how to make your Easy Catfish Dinner
Put skillet on at medium high that is big enough to handle your catfish filets. Eyeball enough olive oil in to coat the bottom. In a bowl that is the right size for your catfish filets put the juice from one of the limes and all of the rest of the ingredients except the catfish. Whisk it all together and then add the catfish fillets. Turn them over a couple of times getting the coated with that good stuff.
Now lay the fillets in the skillet with the flat side that has the gray stripe up and the round side down. Pour the rest of the good stuff from the bowl onto the fillets.
About 3 – 5 minutes each side depending on How well done that you like it and the thickness of your fillets. When they are beginning to get little firm to a poke. Or when you poke them with a fork and gently twist it a little the fillet wants to flake apart.
Then is time to serve up your Easy Catfish Dinner.
I did an easy multi task and made some Lemon Garlic asparagus in another skillet and zapped some of those frozen sweet potato french fries in the air frier.
