Ingredients
olive oil
2small catfish fillets about 6 ounces each or 1 large one divided
2tbspgrated parmesan cheese
2small limes or one lemon divided1 for cooking and 1 for serving
1pinchred pepper flakesor ceyanne pepper
1splashwhite wine or chicken broth
Instructions
Put skillet on at medium high that is big enough to handle your catfish filets and eyeball enough olive oil in it to coat the bottom. In a bowl that is the right size for your catfish filets put the juice from one of the limes and all of the rest of the ingredients except the catfish. Whisk it all together and then add the catfish fillets. Turn them over a couple of times getting the coated with that good stuff.
Now lay the fillets in the skillet with the flat side that has the gray stripe up and the round side down. Pour the rest of the good stuff from the bowl onto the fillets.
About 3 - 5 minutes each side depending on how well done that you like it and the thickness of your fillets. When they are beginning to get little firm to a poke and/or when you poke them with a fork and gently twist it a little the fillet wants to flake apart. Then is time to serve up your Easy Catfish Dinner.
