One Skillet Chicken Zucchini Potatoes is the way to go for those weeknights when you don’t want to get too involved. But, you still want a good tasty supper. You can have it on the table in twenty five minutes or less.
You could use whatever ingredients that you have on hand. Just balance the cooking times or trick them like we are going to do here.
Let’s Get This One Skillet Dinner Going!!
Put a large skillet on at medium high and eyeball enough olive oil to cover the bottom. If your chicken is frozen thaw it in the microwave while you cut up your veggies. Tonight our veggies are Zucchini and potatoes.
The chicken and the zucchini are going to cook faster then the potatoes. So let’s zap the potatoes for a couple of minutes in the microwave as we cut the chicken into chunks. Then put everything into a bowl. Now, you can spice it all up any way that you choose.
I drizzled it with olive oil, grated parmesan cheese, garlic powder, black pepper and a little bit of cayenne pepper. Hey, I was feeling a little spicy.
Put everything in the skillet and be sure to have the zucchini laying flat. And, move the zucchini off to one side of the skillet so that if they start cooking faster then the chicken and potatoes you can scoot the skillet off center a little so the zucchini cooks a little slower.

- 1 large zucchini
- 1/2 cup grated parmesan cheese
- salt and pepper to taste (optional on the salt)
- 1 pinch powdered cayenne pepper
- 1 teaspoon garlic powder
