Pork Tenderloin – In a Skillet for a Quick and Easy Weeknight Dinner

Pork Tenderloin in a Skillet……


……….with the potatoes and veggies will be done and on the table in 30 minutes – or less. 

Put a skillet on your stove with the burner at medium high. Eyeball a couple of tablespoons of olive oil.

With a sharp knife remove the silver skin from the tenderloin. It’s easy, Just be sure to use a sharp knife. The sharper the knife the easier it is.

Sprinkle the tenderloin with salt and pepper then cut it in half. Put both halves in the skillet and……..

………turn them a few times as they cook, getting them seared all over.

Put the potatoes in a bowl and into the microwave set at 4 minutes. While the potatoes and the tenderloin are doing their thing chop up the garlic – or just have that jar of pre chopped garlic waiting – or some that big batch that you chopped and stashed in the freezer for a day just like today. When they have softened up a little cut them up into about 1″ chunks. Add the butter, garlic powder, salt and pepper.

When the tenderloin is seared all around and it is starting to get firm to a finger poke  or it’s at 145-150°F on an instant read meat thermometer lower the heat to medium and add the garlic.

Put the potatoes back into the microwave for a minute and when the garlic  in the skillet is just starting to get golden on the edges add the spinach to the pan and turn it a few times as it wilts. When the spinach is wilted to the point that YOU like it, Serve up your quick and easy Pork Tenderloin dinner. Squeeze a little lemon juice on the spinach and top it all off with some grated parmesan and some dried parsley  – or not – you’re the boss!

Ingredients

  • olive oil
  • 1 pork tenderloin
  • 2 medium potatoes or 1 large one
  • salt and papper
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 3-4 cloves garlic or 2 teaspoons pre chopped
  • 2 large handfuls fresh baby spinach pre washed

Notes

You could use different veggies and still cook them in the skillet. Just add them earlier in the tenderloin cooking process because the spinach in this recipe cooks so quickly.
