I read about this cookbook on Food52 where they showcased this VERY Easy Tomato Sauce. The book is titled Essentials of Classic Italian Cooking. I’ve learned a lot from it and it is great!  And I became even more convinced how straight forward and simple real Italian cooking is. When I read the recipe for this Very Easy Tomato Sauce I couldn’t believe it, but, I had to try it. We had it with potato Gnocchi as the author, Marcella Hazan, suggested and it was real good!

Ingredients

  •  One 28 oz. can Italian plum tomatoes. We use Cento brand San Marzano tomatoes. 
  •  One medium size onion peeled and cut in half
  • 5 Tablespoons butter
  • 1 pinch salt

Directions

 

Put the tomatoes in a saucepan and crush them. I just do it by hand. Put the saucepan on the stove at medium heat. Then add the butter, onion and salt. When it starts to simmer lower the heat to where the sauce just simmers. Stir every ten minutes or so. Crush any large pieces tomatoes with the back of the spoon. Simmer for about forty five minutes. Or until there are small puddles of oil on the top of the sauce, Check for more salt if needed. 

Discard the onion and toss the sauce with some  pasta. Enjoy!

Ingredients

  • 1 28 oz, can Roma tomatoes imported from Italy. We always use Cento brand San Marzano tomatoes.
  • 1 med.onion peeled and cut in half
  • 5 tbsp. butter
  • 1 pinch salt

Instructions

  • Crush by hand or cut up the tomatoes. Add the tomatoes and their juice to a sauce pan. Add the butter, onion and salt. Cook at a slow but steady simmer for 45 minutes, or until the fat floats free from the tomato and rises to the top of the sauce. . Stir from time to time mashing any large piece of tomato in the pan with the back of a wooden spoon.
  • Taste and add salt if needed. Discard the onion before tossing the sauce with the pasta. Enjoy it! We sure did!
