Tomato Sauce with Onion and Butter on potato Gnocchi

Very Easy Tomato Sauce

A simple tomato sauce that is very, very good.

Ingredients
 
 

  • 1 28 oz, can Roma tomatoes imported from Italy. We always use Cento brand San Marzano tomatoes.
  • 1 med.onion peeled and cut in half
  • 5 tbsp. butter
  • 1 pinch salt

Instructions
 

  • Crush by hand or cut up the tomatoes. Add the tomatoes and their juice to a sauce pan. Add the butter, onion and salt. Cook at a slow but steady simmer for 45 minutes, or until the fat floats free from the tomato and rises to the top of the sauce. . Stir from time to time mashing any large piece of tomato in the pan with the back of a wooden spoon.
  • Taste and add salt if needed. Discard the onion before tossing the sauce with the pasta. Enjoy it! We sure did!
