Spicy Cilantro Lime Chicken
Spicy Cilantro Lime Chicken – You have probably heard of Parsley Lemon Chicken. It is an old Italian recipe that is just that, sautéed chicken with parley and lemon and that’s it. As simple as it sounds it is still real good. You will find that substituting cilantro and limes for the parsley and lemons will give a new flavor to that old standby. Then if you add in the jalapeños you will have a spiced up version. You will like it for a quick and easy weeknight supper.
Put a skillet on at medium high and add about a tablespoon of olive oil. Salt, pepper and garlic powder both sides of the chicken and cook until the liquid running out is clear and/or they are firm to a poke with your finger. Remove them to a plate and turn the heat down to medium low.
While the chicken is cooking chop up the cilantro and the jalapeño. Rinse off a lime and cut it in half.
Add the juice from the lime and the chopped jalapeño to the pan and cook just for about a minute until the jalapeño starts to soften. Add the cilantro and cook just until it wilts a little. Spoon the sauce onto the chicken and serve it up!

- 4 chicken tenders
- salt and pepper
- garlic powder
- 1/2 cup cilantro leaves coarsely chopped
- 1 jalapeno pepper seeded and chopped
- 1 fresh lime
