Put a skillet on at medium high and add about a tablespoon of olive oil. Salt, pepper and garlic powder both sides of the chicken and cook until the liquid running out is clear and/or they are firm to a poke with your finger. Remove them to a plate and turn the heat down to medium low.
While the chicken is cooking chop up the cilantro and the jalapeño. Rinse off a lime and cut it in half.
Add the juice from the lime and the chopped jalapeño to the pan and cook just for about a minute until the jalapeño starts to soften. Add the cilantro and cook just until it wilts a little. Spoon the sauce onto the chicken and serve it up!
Some chilled Pinot Grigio or Sauvignon Blanc would go along real good with your Spicy Cilantro Lime Chicken. Bon Appetito!
