Having a Sheetpan Chicken Dinner is not at all unusual at our house. In fact, it happens about once a week.

 

You have had a busy day and/or you just don’t feel energetic or creative. Well then, putting it all on a sheetpan and putting it in the oven sounds good. And, if it turns out real tasty then, it’s a was a great idea!

Tonight, it is chicken tenders, sweet potatoes and carrots.

Today’s Tip

Rotate your pans or trays in the oven. All ovens have hot spots, so rotate your pans or baking dishes around halfway through their cooking time. And, if you have multiple pans in the oven exchange them between racks.

How to make your Sheetpan Chicken Dinner

Set your oven at 400F.  Peal and cut the sweet potato into large french fry shapes. To make your cleanup real easy line your sheetpan with aluminum foil. Spray or wipe the foil with olive oil. Spread out your ingredients on the sheetpan.

Spray or drizzle the sweet potatoes and carrots with olive oil and sprinkle with salt and pepper. And a little powdered cinnamon on the sweet potatoes, if you have some.  Roll them around and do it again.

A little side note here. The carrots usually might not be as soft as you might like them. (We like them chewy) If you want them nice and soft just zap them in the microwave for 2 minutes before you put them on the sheetpan. Or you could substitute something that will cook quicker, like broccoli.

Lay the chicken tenders out in their own area. Drizzle with olive oil. Sprinkle with salt, pepper, garlic powder, dried basil and parmesan cheese. Gently turn them over and do it again. I got a little adventurous and also drizzled a little balsamic vinegar and red wine on the chicken.

Into the oven for about 20 minutes. Check the chicken with a meat thermometer and when it reads 165F everything is ready.
