It was our son-in-law’s birthday and we were cooking up an Italian meal for the family get together. Our great grandson, “Jayden”, wanted to be help. We told him all of the things we were going to make – pasta with meatballs and sausage – chicken parmesan – garlic bread – some caramelized pearl onions – caprese salad. We already had a birthday cake for desert. Jayden wanted to do something that he could do “all by himself”. Well that was the caprese salad.
Gammy gave him the guidance but Jayden did all of the hands on work. He sliced up the wet mozzarella, picked apart the basil leaves and sliced up the tomatoes. He told us that the “presentation is important”. He arranged them in a circle on the salad plate. Drizzled with the extra virgin olive oil and the balsamic vinegar then sprinkled it with a little salt.
It looked great, as you can see and everybody loved it.

Ingredients
- 4 fresh Roma tomatoes sliced
- 1/2 pound fresh mozzarella cheese sliced
- 1 cup fresh basil leaves
- extra virgin olive oil
- balsamic vinegar
- salt
