One Skillet Shrimp Dinner
This one skillet shrimp dinner turned out great. It was quick and easy to create the whole meal in one skillet and it was very good.
Ingredients
- Olive Oil
- 12 – 16 shrimp peeled and deveined
- 2 small to medium size white potatoes – we use white potatoes because you don’t have to peel them – just rinse them off and cut them up
- 2 roma tomatoes
- 1 small to medium size zucchini
- 1/2 of a small onion cut into strips
- 1 fresh lemon cut into quarters
- 6-8 cloves of garlic peeled and chopped
- salt and pepper – to taste
Here’s how to throw together your One Skillet Shrimp Dinner
If your shrimp are frozen put them into a bowl of water to thaw out while you get the rest of the ingredients ready. Cut up the potatoes, tomatoes and zucchini into big bite sized pieces. The onions into strips and the garlic finely chopped. Peel and devein the shrimp if necessary. Cut the lemon into 4 quarters.
Put the skillet on at medium and add enough olive oil to thinly coat the bottom. Let it heat up a little and add the potato pieces. Spread them out so that they are laying flat. Salt and pepper them.
When they have turned a little brown on the bottom side flip them over and push them out towards the edge of the skillet and put the zucchini and onion pieces in the middle.
The tomatoes will soften very quickly and the shrimp also cooks up very quickly so when the potatoes have browned slightly, onions and the zucchini have softened up push everything out to edges of the skillet and add the tomatoes and the garlic.
Turn them over and when they soften up a little – about 30 to 45 seconds – then push everything out the the edge of the skillet and add the shrimp and squeeze the juice from half of the lemon onto everything.
The shrimp will only take about a 45 seconds to a minute each side and when they are pink on both sides and firm serve up and enjoy your One Skillet Shrimp Dinner.
