Quick Chicken Thighs Dinner – Quick and Easy – Gluten Free – Paleo

I dreamed up this Quick Chicken Thighs Dinner just to get off the chicken breast filet track for little bit. It turned out real good – of course – and we are going to add it to our repertoire. Try it. You and your gang will really like it.


 

Put the boneless skinless thighs in a bowl and add 1/2 of the olive oil,  the grated parmesan, chopped garlic, red pepper flakes, black pepper and the turmeric.

Mix it up to get the thighs covered with all of that good stuff.

Put a skillet on at medium high and put in the rest of the olive oil. When it is heated up lay out the chicken thighs in the skillet.

After they are crispy on their skillet side – 3-4 minutes –  turn them over and cook the other side.

When they are firm to a poke and/or the juices are running clear and/or they read 175° on a meat thermometer they are ready for serving.

I had penne pasta aglio e olio with mine, but, Gammy had hers with a microwave baked potato to keep it gluten free. We shared a caprese salad. It turned out to be a very good quick and easy meal.

Ingredients

  • 1 cup olive oil divided
  • 4 boneless skinless chicken thighs
  • 1/4 cup chopped Garlic
  • 1/4 cup grated parmasan cheese
  • 1 pince red pepper flakes
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground black pepper

Instructions
