This Quick Chicken Breast Dinner IS quick, easy and real good.  

Ingredients

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of all the ingredients. Also you can switch the amounts to metric.

 

  • Olive oil
  • 1 cup “short” pasta – short like penne or gnocchi
  • 6 cloves garlic -chopped or sliced
  • 2 tablespoons dried basil leaves -divided – one  for the garlic skillet and the rest for the chicken
  • 1 pinch red pepper flakes
  • 2 boneless skinless chicken breasts
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon dried parsley flakes or 2 tablespoons chopped fresh 

 

And here is how to make your quick chicken breast dinner

 

Put a pot of water on for the pasta. Eyeball about a tablespoon of salt and the add the pasta. Yup, you don’t have to wait for it to boil. Stir it up few times as it softens.

Put a skillet on that is just big enough to handle the pasta when you add it later. Set it at medium low. Add a little more  olive oil than is necessary to cover the bottom. Then add the the chopped up garlic, black pepper, dried basil leaves and just a little pinch of red pepper flakes.

Put another skillet on for the chicken breasts at medium high and eyeball enough olive oil to cover the bottom. Season one side of the chicken with garlic powder, dried basil leaves, black pepper and even a pinch of powdered sage if you want. Put  the chicken in the skillet with the seasoned side down and season the top – aka the unseasoned side. Cook the chicken for about three to four minutes a side depending on the thickness of the breasts. When the juices are running clear and they are firm to a poke or a meat thermometer shows 165°F they are done.

When the pasta is starting to soften up add it and about a tablespoon of the pasta water to the garlic skillet. Toss or stir it a few times as the pasta finishes cooking to get it all covered with the olive oil and garlic.

When the pasta is al dente add some grated parmesan cheese and some dried parsley flakes (or fresh chopped up) Mix it up just before you serve it.
