Pork Tenderloin and Zucchini

Pork Tenderloin and Zucchini is a real quick and easy weeknight dinner. And, the combinations of the flavors from the pork tenderloin, zucchini and the onions turn out real good. Gammy liked it! A lot!
Ingredients
For 2 servings
- 2 Tablespoons Olive Oil
- One small pork tenderloin (appx. 1 lb.)
- 1 medium size zucchini sliced
- 1/2 medium size fresh onion cut into strips
- 2 small sweet potatoes or 1 large halved
- One teaspoon Salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 3/4 cup grated parmesan cheese
Let’s get started with this quick and easy pork tenderloin recipe!
Put a large skillet on at medium high and eyeball a couple of tablespoons of olive oil in.
Slice up the meat, zucchini and onions.
Now put it all in the skillet and sprinkle with salt, pepper, garlic powder and grated parmesan cheese. For the carb tonight I put a couple of sweet potatoes in the microwave to “bake” while the skillet did it’s work.
Toss the skillet stuff often as it cooks up.
When the meat has browned up and the veggies have wilted serve it up!
