Ingredients
 
 

  • 2 tablespoons olive oil
  • 1 small pork tenderloin
  • 1 medium zucchini sliced
  • 1/2 medium fresh onion cut into strips
  • 2 small sweet potatoes or one large - halved
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3/4 cup grated parmesan cheese

Instructions
 

  • Put a large skillet on at medium high and eyeball a couple of tablespoons of olive oil in. Slice up the pork tenderloin, zucchini and onions.
  • Put it all in the skillet and sprinkle with salt, pepper, garlic powder and grated parmesan cheese. For the carb tonight I put a couple of sweet potatoes in the microwave to "bake" while the skillet did it's work.
  • Toss  the skillet stuff often as it cooks up. When the pork tenderloin has browned up and the veggies have wilted serve it up!
