Ingredients
2tablespoonsolive oil
1smallpork tenderloin
1mediumzucchinisliced
1/2mediumfresh onioncut into strips
2smallsweet potatoesor one large - halved
1teaspoonsalt
1/2teaspoonblack pepper
1teaspoongarlic powder
3/4cupgrated parmesan cheese
Instructions
Put a large skillet on at medium high and eyeball a couple of tablespoons of olive oil in.
Slice up the pork tenderloin, zucchini and onions.
Put it all in the skillet and sprinkle with salt, pepper, garlic powder and grated parmesan cheese. For the carb tonight I put a couple of sweet potatoes in the microwave to "bake" while the skillet did it's work.
Toss the skillet stuff often as it cooks up.
When the pork tenderloin has browned up and the veggies have wilted serve it up!
