Parmesan Crusted Chicken Breasts

 


These Parmesan Crusted Chicken Breasts are a nice twist on the regular old breaded chicken breasts. The parmesan gives the breasts a real nice and lively flavor. And, it’s quick and easy. I made some Spaghetti Aglio e olio to go along with mine and a smashed potato for Gammy so she could have hers gluten free.   I accomplished Paleo for her by using almond flour instead of bread crumbs mixed with the grated parmesan. But, if you don’t need to follow the gluten free or paleo protocol just go with bread crumbs and pasta aglio e olio.

Ingredients

For the ingredient amounts scroll down to the recipe card at the bottom of this post. You can also change them to metric.

  • olive oil
  • chicken breasts
  • eggs 
  • milk
  • bread crumbs or for gluten free and paleo almond flour 
  • grated parmesan cheese

“Put a skillet on at medium high with enough olive oil to get the bottom well coated. Have the chicken breasts standing by. Whip the egg(s) and the milk together. In a separate bowl mix the grated parmesan and the bread crumbs – or almond flour – together. Put about a tablespoon per serving aside to mix in with the pasta just before you serve it.

One at a time dip the breasts in the egg wash getting them coated all over. Then into the parmesan mixture. Don’t just turn them over in the parmesan. Press them down onto and into the parmesan mixture getting them coated all over.

Lay the breasts out in the skillet and cook them 2 – 4 minutes a side depending the thickness.

 

 

When they are firm to a poke or read 165° on an instant read meat thermometer they are ready.

 

 

Then serve up and enjoy your Parmesan Crusted Chicken Breasts. With some Caprese Salad and some of Poppop’s no knead bread. 

 

 

If you are having pasta aglio e olio with your Parmesan Crusted Chicken Breasts stir in a little of the grated parmesan mix left over from coating the chicken breasts. Stir it in with the pasta just before you serve it. It’s an old Italian thing and you will like it.
