One Skillet Shrimp Dinner
Your One Skillet Shrimp Dinner will be on your table in 20 minutes or less. It works for your gluten free family and friends. And it’s still delish for everybody!
You can use just about any veggie that will cook up quickly in a skillet. Like, broccoli or carrots or asparagus. As you can see we went with zucchini tonight. If you want a carb to go along just slice up a sweet potato like we did here or the regular white kind.

Here goes your One Skillet Shrimp Dinner!
Put a large skillet on at medium high and add just enough olive oil to cover the bottom.
Slice up the zucchini in about 1/4″ slices and the potatoes in about 1/8″ slices. Because the zucchini will cook faster than the potatoes.
Add the veggies to the skillet and lightly salt and pepper them. Plus a little garlic powder if you want.
Spread the slices out in the skillet. Give them about one and a half to two minutes a side and when they are browned and starting to get a little crispy push the veggies off to the side of the skillet. Lay the shrimp out in the pan. Squeeze the lemon juice on them and sear the shrimp on both sides. When they are pink on the outside and opaque in the middle..

- 1 Medium size fresh zucchini

- 10-12 medium to large shrimp peeled and deveined
