One Skillet Shrimp Dinner - 25 Minutes Max - Gluten Free - Paleo

  • olive oil
  • 1 medium size fresh sweet potato or white
  • 1 Medium size fresh zucchini
  • salt and black pepper
  • garlic powder optional
  • 10-12 medium to large shrimp peeled and deveined

Instructions
 

  • Put a large skillet on at medium high and add just Put a large skillet on at medium high and add just enough olive oil to cover the bottom. Slice up the veggies in about 1/4" or less slices.
  • Spread the slices out in the skillet. Give them about one and a half to two minutes a side and when they are browned and starting to get a little crispy push the veggies off to the side of the skillet and sear the shrimp on both sides. When they are pink on the outside and opaque in the middle
