Another One Pot, quick and easy weeknight recipe from Poppop. This – One skillet Pork Tenderloin Dinner is as good as it is easy. You can change out the veggies to suit your fancy or what you have available on your busy weeknight.

I have better luck using these premartinated small pork tenderloins. You can pick from the different flavor marinades and I’ve found that due to being marinated you won’t have to trim off that thin layer of fat. It just kind of disappears when you cook the tenderloin.

Put a skillet on the stove at medium high and eyeball enough olive oil to barely coat the bottom. Lay the pork tenderloin in the skillet and get started on the veggies.

We’re going with potatoes that we have softened up in the microwave for a couple of minutes, onion cut into wide strips, chopped garlic and frozen broccoli florets.

When the pork tenderloin is seared on one side. Turn it over and add the veggies to the skillet. Sprinkle the black pepper, salt (optional on the salt) and some grated parmesan cheese on the veggies. Stir the veggies a couple times as they cook.

When the other side of the pork tenderloin gets seared take it out of the skillet and set it on your cutting board. Push the veggies out to the sides of the skillet. Slice up the tenderloin into slices that are as thick or as thin as YOU want them. Add them back into the skillet.

Just give the slices about a half minute each side.
