One Skillet Chicken Dinner
This Easy One Skillet Chicken Dinner can also be done with beef or pork or Italian sausages. It will take 30 minutes or less to have on the table. It is perfect for a busy weeknight and it will really be liked by your gang.
The basic veggies are potatoes, peppers and onions. From there you can add whatever you want and have on hand. We had garlic (always) and zucchini.
Ingredients
These amounts are for 2 servings – to change the number of servings just scroll down to the recipe card below this posting. You can also change the amounts to metric
- Olive oil
- 3 large chicken tenders or 1 large boneless skinless breast
- 1 large potato – or 2 medium
- Salt and pepper
- 1 bell pepper – seeds removed and cut into strips
- 1 medium size onion – cut into strips
- 4 cloves garlic chopped
- 1 medium zucchini – cut into about 3/8 inch slices
- grated parmesan cheese – for serving
Here’s how to cook up your Easy One Skillet Chicken Dinner
Put a skillet on at medium high and swirl in about 3-4 tablespoons of olive oil
Cut up the chicken tenders (or boneless skinless breasts) and the potatoes into golf ball sized chunks. Add them to the skillet and lightly salt and black pepper them. Toss as they cook and when they start showing some brown on the edges…..
….add the veggies. Drizzle some more olive oil on them and sprinkle with some salt and pepper of their own.
Toss it all every minute or so and when the onions start to brown on the edges serve it up!
Garnish with a little – or a lot – of grated parmesan and enjoy your One Skillet Chicken Dinner.
