Ingredients
3largechicken tendersor 1 large boneless skinless breast
1large potatoor 2 medium
salt and pepper
1red bell pepperseeds removed and cut into strips
1medium sizeonioncut into strips
4clovesgarlicchopped
1medium zucchinicut into 3/8 inch slices
Instructions
Put a skillet on at medium high and swirl in about 3-4 tablespoons of olive oil.
Cut up the chicken tenders (or boneless skinless breasts) and the potatoes into golf ball sized chunks. Add them to the skillet and lightly salt and black pepper them. Toss as they cook and when they start showing some brown on the edges add the veggies. Drizzle some more olive oil on them and sprinkle with some salt and pepper of their own.

Toss it all every minute or so and when the onions start to brown on the edges serve it up!
