Ingredients
  

  • 3 large chicken tenders or 1 large boneless skinless breast
  • 1 large potato or 2 medium
  • salt and pepper
  • 1 red bell pepper seeds removed and cut into strips
  • 1 medium size onion cut into strips
  • 4 cloves garlic chopped
  • 1 medium zucchini cut into 3/8 inch slices

Instructions
 

  • Put a skillet on at medium high and swirl in about 3-4 tablespoons of olive oil. Cut up the chicken tenders (or boneless skinless breasts) and the potatoes into golf ball sized chunks. Add them to the skillet and lightly salt and black pepper them. Toss as they cook and when they start showing some brown on the edges add the veggies. Drizzle some more olive oil on them and sprinkle with some salt and pepper of their own. ..
  • Toss it all every minute or so and when the onions start to brown on the edges serve it up!
