One Sheet Pan Chicken Dinner

 


This One Sheet Pan Chicken Dinner turned out real good. I was in a hurry and just wanted to put the stuff in the oven because I had a couple of other things to attend to. But, it still had to be good, ya know?

 

Ingredients

These amounts are for 2 servings. If you want different servings amounts scroll down to the recipe card that is below this posting. There you can change the number of servings and it will change all of the amounts of the ingredients to what is needed for the number of servings that you have chosen. Also you can switch the amounts to metric.

  • 4-6 Chicken Tenders or 2 small boneless skinless breasts or 1 large sliced in half horizontally
  • 1 large fresh zucchini cut in half lengthwise then in half cross ways for 4 pieces
  • 2 peeled medium size potatoes or ! large one
  • 3/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp. dried basil
  • 1 tablespoon garlic powder
  • 1 cup grated parmesan cheese divided

How to put together your One Sheet Pan Chicken Dinner

So, I set the oven at 400. Lined a sheet pan with aluminum foil. Cut the potatoes into french fry shapes, the zucchini into big chunks because they cook quicker than the potatoes.

Then the chicken tenders and the veggies into a bowl. Drizzled it all pretty generously with evoo. Salt, pepper, grated parmesan, garlic powder and dried basil. Mixed everything together to get it all coated and spread it all out on the sheet pan. Made sure the pointy side of the potatoes and the flesh side of the zucchini were pointing up. Sprinkled more grated parmesan all over everything.

Into the oven for 15 minutes then the under broiler for another minute. Then enjoyed it. It was real easy. Almost no cleanup and very good.

Ingredients

  • 4-6 chicken tenders
  • 1 fresh zucchini
  • 2 peeled potatoes medium size or one large - cut into french fry shapes
  • 3/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 Tablespoon dried basil
  • 1 Tablespoon garlic powder
  • 1 cup grated parmasan cheese divided

Instructions

  • Set the oven at 400. Cut up the potatoes into french fry shape pieces. The zucchini into large chunks.
  • Put all of the ingredients, but, only half of the grated parmesan cheese, in a bowl. Toss or mix to get everything covered with the good stuff.
  • Cover a sheet pan with aluminum foil. dump it all onto the sheet pan. Arrange the potatoes so that they are resting on the wide side and the sharp edge is pointing up. The zucchini so that the flesh side is up and the skin side is down.
  • Sprinkle everything with the rest of the grated parmesan cheese. About Put it in the oven and bake until the potatoes are crispy and the chicken is firm to a finger poke. About 10 -15 minutes
  • Then under the broiler for a minute and then enjoy!
