Microwave Chicken Parmesan
Microwave Chicken Parmesan? What are you, nuts?
Aside from that, it works! And, it is quick and easy. Plus, it doesn’t heat up the kitchen.
When we were enjoying it we couldn’t tell that it didn’t come from the stove. It was just as good as our usual chicken parmesan.
We had some of our pre cooked Grilled Chicken for the Future in the freezer so I just thawed them out in the microwave.
If you don’t have any pre-cooked chicken in the freezer you could use some leftover rotisserie chicken or just fry up some filets in a skillet. Also, you can find pre cooked frozen chicken filets in the grocery store.
How to make your Microwave Chicken Parmesan
Just top off the filets off with all of the usual,,,,, tomato sauce, mozzarella, dried basil, grated parmesan cheese and drizzle it with olive oil.
Into the microwave until the liquid in the dish is bubbling, about 3-4 minutes. Serve it up with some chianti and some of Poppop’s easy homemade bread for dipping.

- 2 cups marinara sauce or canned crushed tomatoes
- 2 cups grated mozzarella cheese
- 1 tablespoon dried basil leaves
- 1/2 cup grated parmesan cheese
