Ingredients
2smallboneless skinless chicken breasthalved and cooked
2cupsmarinara sauceor canned crushed tomatoes
2 cupsgrated mozzarella cheese
1tablespoondried basil leaves
1/2cupgrated parmesan cheese
olive oil
Instructions
If you don't have any pre-cooked chicken in the freezer you could use some leftover rotisserie chicken or just fry up some filets in a skillet. Also, you can find pre cooked frozen chicken filets in the grocery store.
Just top off the filets off with the tomato sauce, mozzarella, dried basil, grated parmesan cheese and drizzle it with olive oil.
Then into the microwave until the liquid in the dish is bubbling, about 3-4 minutes.Then serve it up with some chianti and some of Poppop's easy homemade bread for dipping.
