So, I’m  in her good graces for a while. But, I’m sure that I’ll find another way to be a bad boy again soon. Always do.

We really liked the way that this turned out. It was quick and easy to cook up and was a very nice weeknight dinner.

Being a grown-up is the best, you don’t need permission to have dessert for dinner.

 

Ingredients

  • Olive oil
  • Salt and Pepper
  • 2 small boneless skinless chicken breasts or 1 large breast sliced in half horizontally or 4 – 6 chicken tenders
  • 1 1/2 Tbsp. chopped garlic
  • 1 Lemon
  • 2 Tbsp. butter
  • 1/2 cup chopped basil leaves or Parsley or 2 Tbsp. dried

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. While it heats up salt and pepper the chicken filets (or tenders). Add the chicken to the skillet and cook them about 3-5 minutes each side depending on their thickness. While the chicken is cooking have the lemon and the butter handy and chop up the garlic. I added some coarsely chopped up basil leaves from Gammy’s garden. Cook the chicken until it is firm to a poke or reads 165° on a meat thermometer.

Now add the butter, garlic, lemon and basil (or parsley). And a splash of white wine, if you can spare a little.

Turn the chicken over a couple of times as all the flavors come together. Just about a minute to a minute and a half. When the liquid just starts to bubble it’s time to serve up and enjoy your quick and easy Lemon Garlic Butter Chicken dinner.

I multi tasked and put some carrots in the microwave with some butter and parsley. And some of those frozen precut french fries in the air fryer. Talk about quick and easy!
