Lemon Butter Shrimp -Gluten Free – Mediterranean Diet

Lemon Butter Shrimp

This Lemon Butter Shrimp recipe is quick, easy and VERY good. 


 

Here are the ingredients

for 3 servings

  • 1/2 stick of butter
  • 1 large lemon 
  • 12-18 shrimp – depending on the size
  • A large pinch of dried or chopped fresh basil 

And here is how to quickly and easily cook up your Lemon Butter Shrimp

If necessary, thaw out, peel and devein the shrimp.  Put a skillet, that is big enough to handle the shrimp, on at medium. Put in the butter. Squeeze in the juice from half of the lemon and toss in the rind.

Add the shrimp and the basil to the skillet and spread them out. Cook them for about a minute and half to two minutes a side. 

When they are pink on the outside and white in the middle serve them up with a wedge of lemon. Spoon some of the liquid from the skillet onto them and enjoy!! And some of poppop’s no knead bread goes along real good.
