You’re the boss! And the boss will very likely agree that this Italian Sausage and Broccoli absolutely qualifies as a quick, easy and delish weeknight meal.
Put a big Skillet or Sauté pan on at medium high and add the olive oil. While it is heating up slice the sausages into coins.
Put the sausage into the pan. You could multi-task and put a pot of water on for your rice or pasta. Stir the sausage regularly as it cooks getting it browned on all sides.
While that is going on rinse and cut up the broccoli and chop up the garlic. We had some scallions on hand so they also went into the mix. You could use onions or just go with the broccoli and garlic. You’re the boss.
When the sausage is browned on all sides add the broccoli and scallions(?) to the pan. After they’ve softened a little stir in the garlic and stir a couple more times for a about a minute. Add the tomatoes – or sauce – and mix it all together. Simmer for about five minutes.
Your rice or pasta will be available by now so serve up your Italian Sausage and Broccoli. Bon Appetito!

Italian Sausage and Broccoli - Weeknight Quicky

- 3 tablespoons extra virgin olive oil
- 5 links Italian sausage i Use a 19 oz. pkg. of Johnsonville hot Italian
- 1 1 pound pkg. fresh broccoli florets cut into equal size pieces
- 1 cup chopped fresh scallions or onion
- 6 cloves garlic chopped
- 2 cups marinara sauce or canned diced tomatoes
