Easy Pork Tenderloin Dinner

 


We like pork tenderloin. Especially when I come up with a way to make it into an Easy Pork Tenderloin Dinner. And get it on the table in a half hour or less. Well I did it again. And in all modesty I have to say that it was real good and it was quick and easy. Instead of the regular large size pork tenderloin that you have to cut the silver skin off with a sharp knife we’ve started using these vacuum sealed smaller tenderloins that come in different flavors. And you never have to slice the silver skin off.

I just cook them up and when they are served and ready to eat you can’t even find the silver skin.

And here is what you will need for your Easy Pork tenderloin Dinner

  • Olive oil
  • 1 small pork tenderloin
  • 1 medium size sweet potato sliced thin
  • 1 small fresh apple sliced thin
  • salt and papper
  • 2 tbsp. Lemon Juice
  • Dried parsley flakes for garnish – optional

 

How to cook up your Easy Pork Tenderloin Dinner

 

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom.

Only if you have to – trim the silver skin off the pork tenderloin. I hope that you can find the vacuum sealed ones in the marinade at your grocery store.

Lay the tenderloin in the skillet.

Sear it on all sides and then move it to a cutting board and slice it into about 3/4″ slices. Put them in the skillet and cook them for about 3-4 minutes a side.

Then move them to a dish that will catch the drippings.

 

While the pork is cooking slice up the sweet potato and the apple.

When you move the pork to the dish add the sweet potato, apple slices, lemon juice, salt and pepper to the skillet. Toss them a few times as they cook to get them coated with the oil, etc.

When you can easily poke a sweet potato slice with a fork put the meat slices  and the drippings back in the skillet.  Toss it all together a couple of times as the pork slices warm back up.

Then serve up and enjoy your Easy Pork Tenderloin Dinner.
