While the pork is cooking slice up the sweet potato and the apple. When you move the pork to the dish add the sweet potato, apple slices, lemon juice, salt and pepper to the skillet. Toss them a few times as they cook to get them coated with the oil, etc.
When you can easily poke a sweet potato slice with a fork put the meat slices and the drippings back in the skillet. Toss it all together a couple of times as the pork slices warm back up. Serve up and enjoy your Easy Pork Tenderloin Dinner.
