Easy Chicken Cordon Bleu

 


This Easy Chicken Cordon Bleu recipe has no rolling up of the chicken and no sauce to make. But, it still is very tasty and quick and easy. The easy chicken cordon bleu part of our supper was just under twenty minutes. Add in the prepping and sautéing the Lemon Garlic Asparagus and it all still was well under 30 minutes. I easily multi-tasked the frozen french fries in the airfryer for our continental weeknight dinner. Well maybe the french fries aren’t ,,,wait they are french fries right? So yeah, they also are continental ,,,sorta.

Here is what you will need for your Easy Chicken Cordon Bleu

The number of servings can be changed in the recipe card found below this post. Changing the amount of servings on the recipe card will automatically change the amounts of the ingredients.

  • olive oil
  • 1 tbsp. butter
  • 2 boneless skinless chicken breasts – or 1 big one sliced in half lengthwise 
  • salt and pepper to taste
  • 2 small slices of ham or 1 big slice halved
  • 2 thick slices cheese (I used fresh mozzarella but any cheese that you like will work)
  • garlic powder 
  • 1 tsp. dried basil 

Now this how to make your Easy Chicken Cordon Bleu

Set the oven at 400°F. Put a skillet on at medium high and add about a tablespoon of olive oil and a tablespoon of butter. Salt, pepper and garlic powder both sides of the filets. When the butter has stopped foaming put them in the skillet. Wile they are cooking get your cheese and ham ready.

Cook the chicken about 3 -4  minutes a side. When they are firm to a poke and/or read 165°F on a meat thermometer they are ready.  Top them first with the ham and then the cheese. Lightly sprinkle garlic powder and dried basil on top of the cheese.

Put the skillet in the oven and check on it pretty frequently. When the cheese is softened up but not runny your Easy Chicken Cordon Bleu is ready.
