Easy Chicken Cordon Bleu

a very easy version of the classic chicken cordon bleu

Ingredients
  

  • olive oil
  • 1 tbsp butter
  • 2 small boneless skinless chicken breasts or 1 large sliced in half
  • salt and pepper
  • garlic powder
  • 2 thick slices fresh mozzarella cheese or any other cheese that you like
  • 2 slices ham
  • dried basil

Instructions
 

  • Set the oven at 400°F. Put a skillet on at medium high and add about a tablespoon of olive oil and a tablespoon of butter. Salt, pepper and garlic powder both sides of the filets. When the butter has stopped foaming put them in the skillet. Wile they are cooking get your cheese and ham ready.
  • Cook the chicken about 3 -4  minutes a side. When they are firm to a poke and/or read 165°F on a meat thermometer they are ready.  Top them first with the ham and then the cheese. Lightly sprinkle garlic powder and dried basil on top of the cheese.
  • Put the skillet in the oven and check on it pretty frequently. When the cheese is softened up but not runny your Easy Chicken Cordon Bleu is ready.
