Beef Patties Parmesan
Yeah. Beef Patties Parmesan. Have you ever heard of it? I hadn’t either, but, we had a pound of chopped beef left over from making eggplant lasagna last night and, well, the Beef Patties Parmesan turned out great.

Put a skillet on at medium heat and add 1 tbsp. olive oil. Mix together the chopped beef, bread crumbs, parmesan cheese, garlic powder, salt and pepper. Or, just go with the chopped beef by itself. It’s up to YOU. Form into two patties, or, more smaller ones if you prefer. Fry the patties in the skillet until done as much as you like them. Soft to a poke is rare, medium firm is medium and firm is well done.
Remove the pan from the burner and turn on the broiler. Top each patty with some tomato sauce or canned tomatoes or even just slices of fresh tomatoes then add as much mozzarella as you want. Sprinkle a little dry oregano and very lightly drizzle a little olive oil. Put the pan under the broiler until the cheese is melted the way you want it.
Then, top it off with some grated Parmesan and a little chopped basil, if you want. Now, serve it up with some pasta, a salad and some of Poppop’s Easy Homemade Bread. I’d bet a ton that you will really like it.

- 1 lb. chopped beef

- 3 tbsp grated parmesan cheese plus a little for garnish
- 1/2 cup marinara sauce or canned or slices of fresh tomato
- enough to cover the patties mozzarella sliced or shredded
- 2 small pinches dried oregano
- 1 tbsp chopped fresh basil optional for garnish dried parsley would work
