Baked Lemon Pepper Chicken
Baked Lemon Pepper Chicken is one of our favorites. And, not just us. It also goes over real big when we serve it up to family and friends. AND, it takes just minutes to put together and get into the oven.
Today’s Tip
Consider chicken thighs instead of breasts sometimes. Like we did in today’s recipe. We like having the boneless skinless breasts in the freezer ready to go. But for a change in the routine we also regularly switch to the thighs. They have more depth of flavor and stay moist at higher temperatures than the breasts do.
You can switch out some other herbs beyond the Lemon Pepper. Today we’re going with dried basil and oregano. But, my mind wanders to red pepper flakes and garlic powder and dill weed. Just about any dried herbs go along good with the Lemon Pepper.
How to put it together
Set your oven at 350 degrees F. Lightly spray or rub some olive oil onto a baking sheet large enough to handle the chicken thighs (or breasts) with a little room between them.
Put the dry ingredients in a bowl and whisk them together with a whisk or table fork.
Lay the chicken thighs in the baking sheet. Squeeze a little lemon (or lime) juice and olive oil on the chicken.
Cover the chicken with the dry ingredients.
Bake for about 25 minutes. Check with a meat thermometer and when the internal temperature is 165 Degrees F they are ready to serve.
Serve up your Baked Lemon Pepper Chicken. Garnish with some chopped fresh basil or parsley if you want.
