Growing up in Northern New Jersey, and as a part of the process wandering over to lower Manhattan and Brooklyn, I enjoyed Chicken Murphy in lots of different Italian restaurants and Italian friends homes, done lots of different ways. This is the  best. Our mom was a working mom. Our neighbor, Nan Papparella, took care of my sister and I when we were little while our mom was at work. Nan knew that we liked Chicken Murphy and made it this way for us pretty often.

Here is what you will need for your Chicken Murphy

 

2 servings -The number of servings can be changed in the recipe card found below this post. Changing the amount of servings on the recipe card will automatically change the amounts of the ingredients. You can also switch the amounts to metric.

 

  • 1/2 cup olive oil
  • salt and pepper
  • 2 small chicken filets or 4 tenders
  • 1 link hot italian sausage
  • 1 medium sized potato sliced in about 1/4 inch slices
  • 1/2 tsp red pepper flakes
  • 1/2 medium sized onion sliced
  • 1 fresh green bell pepper, seeded and very coarsely chopped up
  • 4 cloves garlic chopped
  • 1 roma tómato chopped or 1/2 cup tomato sauce
  • grated parmesan cheese

Here’s your Chicken Murphy How To

Put 2 skillets on at medium high and add enough olive oil to cover the bottoms. Salt and pepper the chicken fillets and cook 3-5 minutes each side depending on the thickness. When the juice runs clear and they are firm to a poke or read 165°F on a meat thermometer remove them to a plate that will catch the drippings.

While the chicken is cooking slice a link of hot Italian Sausage into slices about 1/2 inch thick and put them in the other pan right away and stir often.  Slice up a medium size potato and add the potato slices. Sprinkle 1/2 tsp. each of salt, black pepper and red pepper flakes on the potato and sausage. Toss it all together about every 30 seconds.

 

Veggie Mixture for Chicken Murphy

Slice up 1/2 of a medium onion. Cut a green bell pepper in half and remove the stem and the seeds. Cut into strips about 1/2 inch wide and 1 inch long. Add the onion and pepper to the pan and toss it all together. Let it all cook for two or three minutes tossing regularly until the onion starts to get translucent. Add the chopped garlic and toss it all together. Cut a ripe Roma tomato in half lengthwise and cut off the green stem. Chop it up and add it to the sausage and veggies.

An alternative to the tomato would be a little marinara sauce if you have some hanging out in the fridge. Keep heating and tossing until the tomato starts to loosen up. Add some grated parmesan and toss it again. Put the chicken on top of the veggies to reheat a little and then put the chicken on the plate and top it with the sausage and veggies.

Push the sausage out to the edge of the pan and add the potato slices. Sprinkle 1/2 tsp. each of salt, black pepper and red pepper flakes on the potato and sausage. Let them get brown and toss it all together.
  • Slice up 1/2 of a medium onion. Cut a green pepper in half and remove the stem and the seeds. Cut into strips about 1/2 inch wide and 1 inch long.
