I had never done Cod, nor any fish, like this before and it turned out great! It’s a quick and simple dinner for busy weeknights, but delicious enough to impress company. Baked Cod Filets with Lemon and Mint is going to appear pretty regularly at our house from now on. Check out the recipe below – I’m sure your family will love this as much as we did.
First, set your oven at 400°F/200°C. Zest the lemon(s) and chop up the mint leaves. Mix them together.
Mix the flour, salt, pepper, grated parmesan and the cayenne pepper together in a shallow dish. Then mix together the melted butter and the lemon juice in another shallow dish. Line a baking pan or small cookie sheet with aluminum foil and spray with oil or nonstick cooking spray.
Rinse off the cod filets and pat them dry. One at a time, dip them in the butter and lemon mixture and then in the flour mixture before placing them in the pan. Spread about half of the lemon zest mint mixture on top of the filets and bake until they are firm and the flour coating is starting to get a little crusty – about 15 minutes. Switch the oven to broil and move the cod to the top rack. When they are as golden on top as YOU want, sprinkle the rest of the zest and mint mixture on top and serve them up!
A chilled Pinot Grigio went along with these baked Cod filets with lemon and mint just great.

Ingredients
- 1 fresh lemon zested then juiced in with the butter
- 1/2 cup fresh mint leaves, chopped
- 1/3 stick butter melted
- 12-14 ounces codfish filets
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cayenne pepper
- 2 tablespoons grated parmesan cheese
