Ingredients
1fresh lemonzested then juiced in with the butter
1/2cupfresh mint leaves, chopped
1/3stickbuttermelted
12-14ouncescodfish filets
1/2cupflour
1/2teaspoonsalt
1/4teaspoonblack pepper
1/4teaspoonground cayenne pepper
2tablespoonsgrated parmesan cheese
Instructions
Set your oven at 400°F/200°C. Zest the lemon(s) and chop up the mint leaves. Mix them together.
Mix the flour, salt, pepper, grated parmesan and the cayenne pepper together in a shallow dish. Mix together the melted butter and the lemon juice in another shallow dish. Line a baking pan or small cookie sheet with aluminum foil and spray with oil.
Rinse off the cod filets and pat them dry. One at a time dip them in the butter and lemon mixture then in the flour mixture then place them in the pan. Spread about half of the lemon zest mint mixture on top and bake until they are firm and the flour coating is starting to get a little crusty. About 15 minutes. Switch the oven to broil and move the cod to the top rack. When they are as golden on top as YOU want sprinkle the rest of the zest and mint on top and serve them up!
Notes
You can use parsley, cilantro, or basil leaves instead of mint and lime instead of lemon.
