One Pan Grilled Chicken Meal
You will make this One Pan Grilled Chicken Meal for a weeknight dinner fairly regularly because it’s simple, one pan and you probably keep all of the ingredients on hand in the fridge. I’ll bet that you always have a bag of frozen chicken tenders or breasts in the freezer and potatoes and onions in the fridge. When you just want to throw together a quick no brainer but, you still want it to be good, this will always fill the bill. You can use a stovetop grill like I did tonight or you make it in the oven, on a cookie sheet lined with foil for an easy cleanup.

Here is what you will need for your One pan grilled Chicken Meal
2 Servings – The number of servings can be changed in the recipe card found below this post. Changing the amount of servings on the recipe card will automatically change the amounts of the ingredients.
If your chicken needs to be thawed out just put it in the microwave with the proper settings. While that is going on clean and slice the potatoes into about 3/8″ slices. Cut the ends off of the onion, peel it and slice it into about 1/2″ slices. Be careful handling the onion slices because they will want to come apart.
Put your stovetop grill on the stove at medium high and spray or wipe it with olive oil.
Spread the veggies out on the cutting board and lightly drizzle or spray with olive oil. Salt and pepper them then turn them over and do the other side. Spread them out on the grill (or cookie sheet) leaving room for the chicken. As the veggies get started drizzle the chicken with olive oil, lightly sprinkle salt, black pepper, cayenne pepper or crushed red pepper. Toss the chicken to get it all coated with the oil and spices. Add the chicken to the grill (or cookie sheet).
and after about 3-4 minutes . Turn everything over and give the other side the same treatment.
Then serve it up! We had some Poppop’s homemade bread with our cheap, fast and very good dinner.
Tips for your OnePan Grilled Chicken Meal
Any vegetable that doesn’t cook real fast will work as a substitute for the onion slices. Like carrots or thick slices of zucchini.
You can do it on the barbecue grill outside or in a big skillet instead of the stovetop grill.
Boneless skinless chicken thighs will work instead of the tenders or breasts. They will take a little longer to cook so start them first as you cut up the veggies.

Ingredients
- 3 chicken tenders or more if you're real hungry
- 6 tablespoons olive oil 2 for grill 2 for veggies 2 for chicken
- salt and black pepper
- 2 pinches cayenne pepper or crushed red pepper flakes
- 1 large fresh onion
- 2 medium size red potatoes or white or russet
- 2 tablespoons chopped fresh parsley or basil for garnish (optional)
